Caribbean Fall Pumpkin Cookies

Caribbean Pumpkin Cookies in the Fall!?! YUP! You read that right. Though we do not have the fall season In the Caribbean, we DO LOVE to make the most of our fruits and vegetables in their season and these pumpkin cookies are my long time favorite.

This pumpkin cookie recipe is one we swear by during “pumpkin season”. In fact, I’ve used this very simple Caribbean recipe to make my Fall Pumpkin Chocolate Chip Cookies every year here in Florida.

The warm hug that a from-scratch cookie gives in the fall is truly something special. Furthermore, I love that you can add any topping your heart desires to personalize the flavor profile of this pumpkin cookie recipe. My favorite go to’s are, dark chocolate chips, nuts, and marshmallows. However, with this recipe, the possibilities are endless!

There is truly nothing more delicious than a home-made cookie during the holidays. So, In this post I am going to tell you all about this super simple Caribbean pumpkin cookie recipe in hopes that you turn it into YOUR dream fall cookie!

I encourage you to play around with fun ingredients! Chocolate chips, white chocolate chips, dark chocolate chunks, sprinkles, cool whip, powdered sugar, and cinnamon sugar are all just a few ingredient ideas that you can add to this delicious recipe. Really, its all up to you!

This blog post is all about a pumpkin cookie recipe that I learned in the Caribbean! With a few added ingredients, this recipe has turned into one that I have so much fun with here in Florida, especially, during the fall.

How to make Pumpkin Cookies:

Combine Cream Mixture Ingredients: Add butter, brown sugar, and granulated sugar to mixer and mix well. Add egg and pumpkin; mix for 2 mins.

Combine Flour Mixture Ingredients: Sift flour. Add cinnamon, salt, baking powder, and baking soda to flour mixture.

Combine Flour and Creamed Mixture: Add flour mixture to cream mixture in mixer and mix well.

How to make Chocolate Pumpkin Cookies

Cool Whip (optional): Add 1/2 cup of cool whip for soft, chewy texture.

Add Topping: Add Chocolate chips or Dark Chocolate chunks to mixture. Roll in powdered sugar if your heart so desires.

Bake: Use an Ice cream scoop or spoon to place cookies on a baking sheet. Top with a few more chocolate chips and bake at 335 degrees F for 9-12 minutes.

Ingredients
  

  • 1/4 cup butter non-salted
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1/2 cup mashed pumpkin
  • 1 cup flour
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup cool whip Optional

Instructions
 

  • Cream butter, brown sugar, and granulated sugar
  • Add egg and pumpkin; beat for 2 minutes
  • In a separate bowl; Sift in flour, baking soda, and baking powder: add salt and cinnamon
  • Add flour mixture to creamed mixture
  • Mix in cool whip for soft and chewy cookie
  • Use Ice Cream Scoop or Spoon to place dough on baking pan
  • Personalize cookie; Roll in chocolate chips, cinnamon sugar, powdered sugar, nuts, etc.
  • Bake in a pre heated oven at 335 F for 12 mins

Additional Pumpkin Cookie Topping Ideas

White Chocolate chips, cinnamon sugar, sprinkles, peanuts, walnuts, almonds, food coloring etc. This is the part where you get to be creative and make this cookie recipe into your personal favorite.

When taking these to fall pot lucks or parties, I LOVE adding orange food coloring to give them a fun festive pop of color. I also recommend adding green sprinkles or glitter for a colorful fall pumpkin cookie.
